Pecan is one of our favourite nuts to use as we just love their flavour. These are a great option to give to your non keto family members as they are delicious. These are our favourite sweet treat and we love to have some stored in the freezer when we are craving something sweet.
These are also an excellent option to take for a work morning tea or a pot luck. They will quickly become everyone’s favourite, even the biggest keto nay-sayers.

Coconut in it’s many forms can be so versatile in baking. For this Crust, I used unsweetened coconut (dessicated). It is basically just coconut that has been grated into small pieces and then dried. Coconut helps balance blood sugar which is obviously critical for success on a keto diet. Coconut contains the medium chain triglycerides or MCT oil which is helpful for helping to burn fat as well.
When it comes down to the sweetener you choose, erythritol can be used with success but if you have digestive trouble with it like I do, you can opt for a mix of that and stevia or monk fruit too.
The butter helps bind the crust.

These healthy pumpkin cheesecake bars are layered with a bottom almond flour crust, a middle cheesecake layer, and a top pumpkin layer. Low carb, keto friendly, and gluten-free.
These dessert bars represent the best of both worlds — part pumpkin pie and part cheesecake, so you can get both flavors in a single bite. They’re perfect for people who consider pumpkin pie to be a bit too strong on the pumpkin flavor (that’s me), as the cheesecake layer helps to offset the pumpkin. The bars have a dense texture with a sturdy almond flour crust on the bottom, a thick and rich cheesecake layer, and a lighter pumpkin layer on the top.
