Last weekend I had a few friends over for an early Friendsgiving. If your not familiar, Friendsgiving is a made up holiday where you gather all of your friends together and eat Thanksgiving like food since you all might be spending actual Thanksgiving with relatives. This time last year I wasn’t on keto so I really wanted to go all out for my Friendsgiving celebration. The first thing I needed to get together was a solid side. So, I decided to make a super cheesy green bean casserole!

Brussels Sprout Burgers
I love brussels sprouts. They are one of my favorite vegetables but its so much work to prepare them. I really like my Bacon Brussels Sprouts but to properly prepare them you need to quarter and wash a million brussels sprouts! Then I got the idea, why not shred the sprouts? Just rinse them off and through them through the food processor! It worked out really well and made a nice little vegetable patty. In fact, I think if I were to have a vegetarian over, I would probably make these instead of veggie burgers! I made these for Valentine’s day along with Seared and Stuffed Flank Steak and Strawberry Cheesecake.

I’ve been experimenting with different Keto biscuit recipes over the past few weeks and this recipe is the culmination of many failed attempts(and a lot of taste-testing!). I present to you the Ultimate Keto Cheddar Jalapeno Biscuits! I wanted to recreate the infamous “Cheddar Bay Biscuits” from Red Lobster without the carbs, but with all the flavor. Truly a daunting task as Red Lobster’s biscuits are the definition of perfection in every way. If I had to choose between a night with Scarlett Johansson and a bakers dozen(“bakers dozen” is a vastly underappreciated concept) of CBB’s, I’m probably going Scarlett, but I would think about it for at least 30 seconds first.

MEDITERRANEAN ZUCCHINI NOODLE PASTA – LOW CARB, GLUTEN FREE, PRIMAL
I love, love, love the combination of olive oil, garlic and butter on noodles. Zucchini noodles are no exception to this rule. This dish is packed with flavor and super easy to make. It is also great served as a cold salad. I like to make it a one pot low carb meal and add chicken or shrimp to it. If you like a saucier low carb pasta variation, try topping it with the Keto Garlic Parmesan Cream sauce from my Brussels Sprouts recipe. This Paderno Spiral Slicer is the one I swear by.
