Avocado Cucumber Ginger Salad Recipe [Paleo, Keto, AIP]

Credit :paleoflourish.com

This is a super simple salad for summer. The cucumber and ginger make it really refreshing, and the avocado adds in some extra healthy fats.
This recipe can be a side dish or a quick snack. It takes 5-minutes to make, and you can use your leftover cucumber and avocado from making another dish (like this tuna salad recipe).

Pink Peppercorn Avocado Salad Recipe [Paleo, Keto]

Credit :paleoflourish.com

I’ve recently fallen in love with pink peppercorns!
If you haven’t tried them before, they’re not spicy like black peppercorns. They’re lightly peppery, fruity, and almost a bit sweet. They also add a touch of crunch to the salad recipe.
That means they can make a boring salad suddenly come alive. While fresh tomatoes and avocados and extra virgin olive oil all have their own beautiful and delicate flavors, the pink peppercorns add a whole new dimension to the dish.

Paleo Courgette Avocado and Mackerel Spring Salad Recipe

Credit :paleoflourish.com

This salad was whipped up in under 10 minutes and requires very little prep – handy given builders have invaded my house this week and turned off the water supply! It is loaded with good fats from the avocado and mackerel and plenty of protein from the mackerel and crunchy nuts. The leftover thyme roast butternut squash cubes which were sitting in the fridge are satisfyingly sweet and show that it is always worth roasting a few extra veggies for dinner for quick lunch options the following day. We have lots of pretty edible borage flowers in the garden at the moment which taste a little like cucumber. Not only do they look amazing but they add a fresh lightness to the dish.
