Hi all and welcome back to The Fabulous Mommies (Home of Plant Based recipes)! I Made “Avocado or Tomato Gnocchi” today so I thought I’d share with all my savoury lovers! I actually made a few varieties but will share this one for now and the others sometime next week. Hope you have all been well! Tag a friend who might like this in our instagram page:

  • 250 g Potato mashed⠀
  • 120 g All Purpose Flour⠀

Avocado Pesto:

  • 1 large bunch fresh basil⠀
  • 2 ripe avocados⠀
  • ½ cup walnuts or hemp seeds⠀
  • 2 tablespoons lemon juice⠀
  • 3 cloves garlic⠀
  • ½ teaspoon fine sea salt⠀
  • ½ cup extra-virgin olive oil⠀
  • Ground pepper to taste⠀

Peel and boil the potatoes for 15 minutes until completely soft.⠀
Mash the potatoes thoroughly, preferably using a potato ricer.⠀
Add the flour gradually and work it into the potato completely before adding more. Continue kneading until all the flour is used up and you have a dough that isn’t sticky but is still soft.⠀
Cut the dough into 4 pieces and roll each one into a sausage shape about 1/2 inch in diameter. Cut the sausage into 1 inch chunks. If you want to, roll each piece down the back of a fork. Rolling the pieces down the fork is optional.⠀
Bring a large pot of salted water to a boil and drop the gnocchi pieces into the water in small batches. When they float to the top they are ready, so fish them out with a slotted spoon.⠀

Strip basil leaves from the stems and add to a food processor along with avocados, walnuts (or hemp seeds), lemon juice, garlic and salt; pulse until finely chopped. Add oil and process to form a thick paste. Season with pepper.⠀

Combine the gnocchi with the avo pesto or tomato sauce. Enjoy!
