INGREDIENTS:

  • Filled with Roasted Curried Chickpeas
  • Baked Sweet potato
  • Roasted Cauliflower
  • Quinoa
  • Avocado
  • lots of spinach and lettuce underneath

DIRECTIONS:

I preheated the oven to 200C/180c fan/400F/gas 6, lined a large baking tray with nonstick baking parchment. Peeled and chopped a medium sweet potato, halved a few large cauliflower florets, drained and rinsed 400g can chickpeas. Added a sprinkle of curry powder over the chickpeas (I dry mine using a clean tea towel first) then stir in the curry powder until coated. Add the sweet potato chunks on the baking tray with the cauliflower florets. Bake for 15 mins, then added the curried chickpeas and baked for further 15 mins until everything is crispy and cooked. Serve with quinoa, avocado & spinach.
