So today i’m about to share a delicious vegan recipe made with simple and healthy “Hazelnut Chocolate Chip Banana Bread”! Eating vegan doesn’t have to be expensive either. Here you’ll find full instructions how to made it with everyday ingredients:

INGREDIENTS:

Recipe (for 1 small bread pan)

  • 3 large ripe bananas
  • 7-8 medjool dates (soaked in water overnight) or about 1/2 cup date purée
  • 1 cup ground hazelnuts
  • 1 cup ground oats
  • 2 tbsp ground flax seeds
  • 1 tbsp corn starch
  • 1/2 cup oat milk
  • 1 tbsp apple cider vinegar
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1/4 cup vegan mini chocolate chips + 1 tbsp (on top) *

DIRECTIONS:

Preheat oven to 350 F / 175 C.

Mash 2 of the 3 bananas with a fork and blend up dates with 2 tbsp of the soaking liquid.

Add hazelnut and oat flour to a mixing bowl, along with the ground flax seeds, baking soda and baking powder, cinnamon and salt.

Add apple cider vinegar, mashed bananas, dates and oat milk and stir until incorporated.

Stir in the 1/4 cup of chocolate chips.

Add batter to a greased (or non stick) bread pan and top with the third banana (or just mash and mix it in with the other 2) and the extra tbsp of chocolate chips.

Bake for about an hour, let cool down a bit and enjoy

*Skip or replace with crushed walnuts/almonds etc if you want to make this completely added sugar free!
