Hi all and welcome back to The Fabulous Mommies (Home of Plant Based recipes)! I Made “Orange Poppy Seed Loaf” today so I thought I’d share with all my savoury lovers! I actually made a few varieties but will share this one for now and the others sometime next week. Hope you have all been well! Tag a friend who might like this in our instagram page:
- 3 cups all-purpose flour
- 1 cup organic sugar
- 1 cup melted vegan butter (or neutral tasting oil)
- 1/2 cup oat milk
- 1/2 cup sparkling water
- 3/4 tbsp baking powder
- 2-3 tbsp poppy seeds
- Pinch of salt
- 2 large/3 medium organic oranges for:
- 3/4 cup orange juice
- 1 full tbsp orange zest + 1 tsp for the frosting
- 2 heaping tbsp vegan cheese
- 1/2 cup organic powdered sugar
- 1 tbsp orange juice
- 1 tsp orange zest
Preheat oven to 350 F/175 C.
Wash and thoroughly dry oranges, grate the zest, then juice them.
Cream together melted vegan butter, sugar, oat milk, orange juice and zest. I use a handheld mixer for this but you can also use a whisk.
Stir in flour, 1 cup at a time (sifted to avoid clumps), salt, and baking powder just until smooth and flour is incorporated.
Fold in sparkling water and poppy seeds.
Pour batter into a greased 9×5 in loaf pan, and bake for a 55-60 minutes (check if a toothpick comes out clean).
Let it cool down for at least 30 minutes before taking it out of the pan.
Prepare frosting in the meantime, and spread it over the cooled down loaf.
Slice, and enjoy!
If you don’t have sparkling water, replace it with more plant milk. You can also make a simple glaze with powdered sugar and orange juice/zest.
