Plant Based recipes have always been a staple food in my household. They’re such a fresh, flavoursome dish and are a great meal to have with family and friends. One of my favourite recipes among them is “Oven Baked Crispy Fries and Guac” that they’re incredibly yummy and flavorful. And the abundance of fresh vegetables and herbs give these delicious vegan recipe, taste and texture:
- 4 large baking potatoes
- 11/2 tablespoons olive oil
- salt & pepper
- a sprinkle of paprika
- 3 avocados
- 1 firm tomato, finely diced
- 1/2 white onion
- 1/2 cup chopped cilantro
- 2 tbsp fresh lemon or lime juice
- Optional salt and pepper to taste
Preheat oven to 400. Wash potatoes leaving skin on (you can peel them if you prefer).
Fill a bowl with cold water. Slice potatoes into 3-4 slices length wise and then into strips.
Let potatoes soak in cold water for at least 30 minutes (this removes starch from the potato resulting in crispier french fries). Remove from water and pat dry.
Toss with oil and seasoning.
Bake for 30 minutes. Turn fries and bake for an additional 10-15 minutes .
Open the avocados and scoop out the flesh. An easy way is to cut it length-wise around the pit and than using a chefs knife strike the pit and then twist the knife so you can easily remove the pit and scoop out the flesh.
Mash the flesh with a fork, it can still have hard parts, follow your preference.
Stir the other ingredients. Enjoy!
