Hi all and welcome back to The Fabulous Mommies (Home of Plant Based recipes)! I Made “Vegan “California Roll” Onigirazu Sushi Sandwich” today so I thought I’d share with all my savoury lovers! I actually made a few varieties but will share this one for now and the others sometime next week. Hope you have all been well! Tag a friend who might like this in our instagram page:

  • 2 cups dry Japanese sushi rice
  • ⅓ cup rice vinegar
  • 4 nori sheets
  • 1 avocado
  • 1 cucumber
  • 1 can (rainforest-friendly) hearts of palm
  • 2 tbsp vegan mayo or cashew cream
  • 1 tsp paprika

Optional– pickled ginger and chopped cilantro or other garnish

Wash and cook sushi rice in 2 cups water; add vinegar while still warm. Separately, slice cucumber and avocado and drain hearts of palm. Tear hearts of palm slightly, and cut in half. Toss with vegan mayo or cashew cream. In the center of a nori sheet, layer in a small rectangle rice, pickled ginger, cucumber, avocado, and hearts of palm. Sprinkle paprika onto hearts of palm; top with more cucumber slices and pickled ginger, then a thick layer of sushi rice. Bring sides of nori up and top with an additional sheet; compact this into a tight sandwich-like shape — the nori will stick to the rice and soften after it absorbs some water. Slice in half and serve fresh (or pack for lunch). Enjoy!
